Ingredients:
  • 225g plain flour
  • 2.00 gm baking powder
  • 40g almond meal
  • 90g salted butter, at room temperature
  • 110g caster sugar
  • Grated zest of 1 orange
  • 4.40 gm vanilla extract
  • Icing sugar, to dust
Instructions:
  • Preheat your oven to 180°C and prepare your baking tray by lining it with baking paper.
  • In a bowl, mix the flour and baking powder, then gently fold in the almond meal. In another bowl, use electric beaters to cream the butter and sugar until light and fluffy. Add orange zest, vanilla, and 1 egg, beat until combined. Gradually fold in the flour mixture until fully incorporated.
  • Divide the dough into 24 pieces and roll each into a ball. Pinch each ball twice to form a peak, then transfer to a tray. Mix the remaining egg with 1 tablespoon water and lightly glaze the biscuits with the mixture.
  • Bake the biscuits for 10-12 minutes until they are firm to the touch but still pale. If needed, rotate the trays halfway through baking for even cooking. Let them cool on the trays for 5 minutes, then transfer to a wire rack to cool completely. Dust with icing sugar before serving. Store in an airtight container for up to 5 days.
