Impress with cozy orange gingerbread muffins made easy with Bisquick Heart Smart® mix.
Ingredients:
  • 2 cups Bisquick™ Heart Smart™ mix
  • 1/4 cup cinnamon-sugar
  • 1/2 teaspoon ground ginger
  • 2/3 cup fat-free (skim) milk
  • 1/4 cup molasses
  • 1 egg, slightly beaten
  • 1 tablespoon grated orange peel
Instructions:
  • Preheat the oven to 400°F and line 12 regular-size muffin cups with paper baking cups.
  • Combine Bisquick mix, 3 tablespoons plus 1 1/2 teaspoons of cinnamon-sugar, and ginger in a large bowl, creating a well in the center. In a small bowl, whisk together milk, molasses, egg, and orange peel. Add the wet ingredients to the dry mixture, stirring until just combined. Fill muffin cups halfway with batter, then sprinkle with remaining 1 1/2 teaspoons of cinnamon-sugar.
  • Bake for 12 minutes, then transfer immediately from the pan to a cooling rack. Enjoy warm.
