Delicious homemade breakfast muffins bursting with citrus flavor from fresh orange juice and zest.
Ingredients:
  • 3 teaspoons baking powder
  • 0.75 cup orange juice
  • 0.33333334326744 cup vegetable oil
  • 1 tablespoon orange zest
Instructions:
  • Preheat oven to 400 degrees F (205 degrees C) and grease the bottoms of 12 muffin cups or line them with baking cups.
  • Combine flour, sugar, baking powder, orange peel, and salt in a medium bowl and mix. In a small bowl, blend orange juice, oil, and egg together. Add dry ingredients to wet ingredients all at once and stir until just combined (batter will be lumpy).
  • Fill your cups two-thirds of the way full with the batter. Bake in the oven for 20 to 25 minutes or until a toothpick inserted in the center comes out clean. Allow the cupcakes to cool for 1 minute before removing them from the pan. Serve while still warm.
