Ingredients:
  • 125.00 gm butter, softened
  • 64.38 gm milk
  • 2 eggs
  • 161.25 gm caster sugar
  • 300.00 gm self-raising flour, sifted
  • 1 orange, zested and juiced
Instructions:
  • Combine all ingredients, incorporating the bright flavors of fresh orange zest and juice.
  • Scoop mixture into a 12-cup muffin tin.
  • Place in a preheated 180C oven for 20 minutes, or until the muffins are lightly browned on top. To test for doneness, insert a toothpick into a muffin – if it comes out clean, they are ready. Allow to cool for 20 minutes before serving.
  • Ideal for freezing and packing in the kids' school lunches.
