Quick and easy vegan gluten-free orange muffins for a delicious breakfast treat.
Ingredients:
  • 3 cups gluten-free rolled oats
  • 1 cup coconut sugar
  • 1 cup freshly squeezed orange juice
  • 1 cup almond milk
  • 2 tablespoons orange zest
  • 1.5 teaspoons gluten-free baking soda
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and line a 12-cup muffin tin with paper liners.
  • In a blender, blend oats, sugar, orange juice, almond milk, orange zest, baking soda, vanilla extract, and salt until smooth. Fill prepared muffin cups to the top with the batter.
  • Bake in the preheated oven for about 22 minutes, until the tops spring back when lightly pressed. Let cool in the tin for 10 minutes, then serve warm.
