Indulge guilt-free with a zesty roasted orange and hazelnut yogurt parfait.
Ingredients:
  • 4 navel oranges, peeled, white pith removed
  • 75g (1/2 cup) whole hazelnuts, roughly chopped
  • 50g (1/2 cup) rolled oats
  • 1 500g container fat-free natural yoghurt
  • 5.00 gm liquid sweetener
Instructions:
  • Preheat the grill on high and line the grill tray with foil. Cut each orange into 8 slices. Arrange half of the orange slices on the tray and grill for 5 minutes until lightly browned. Flip and grill for another 5 minutes. Transfer to a plate and repeat with the rest of the orange slices.
  • Toast hazelnuts and oats in a medium frying pan over high heat, stirring consistently, until browned and fragrant, about 3-4 minutes.
  • Combine yogurt and sweetener in a medium bowl, whisking until the mixture is smooth.
  • To serve, layer each serving glass with 4 orange slices, a dollop of the yoghurt mixture, a sprinkle of rolled oats, and nuts. Repeat for a second layer.
