Delicious pecan cookies with orange and chocolate flavors, perfect for tea time or holiday gift trays.
Ingredients:
  • 1.75 cups all-purpose flour
  • 1 cup finely chopped pecans
  • 0.75 cup butter, softened
  • 0.5 cup confectioners' sugar
  • 2 tablespoons grated orange zest, divided
  • 0.5 teaspoon vanilla extract
  • 0.5 teaspoon freshly squeezed orange juice
  • 0.5 cup semi-sweet chocolate chips
Instructions:
  • Preheat the oven to 325°F (165°C) and combine the flour with the pecans, then set aside.
  • Combine butter and confectioners' sugar in a large bowl until light and fluffy. Mix in 1 tablespoon of orange zest, vanilla, and orange juice. Add flour and nuts, stirring until well combined. Roll into 1-inch balls and space 1 inch apart on ungreased cookie sheets.
  • Bake for 20 to 25 minutes until the edges are just starting to brown. Let cool for 10 minutes, then transfer to wire racks to cool completely.
  • In a small glass or ceramic bowl, microwave the chocolate chips for 1 minute. Stir, then heat and stir at 20-second intervals until smooth.
  • Dunk the cookies in the luscious melted chocolate, then generously sprinkle the rest of the zesty orange over them before the chocolate solidifies for a beautifully decorated finish. Let them cool to perfection at room temperature or in the fridge until they're firm, then keep them fresh in a sealed container at room temperature.
