Tangy cranberries and orange juice elevate simple muffins into a kid-friendly treat.
Ingredients:
  • 1.5 cups all-purpose flour
  • 0.75 cup fresh cranberries
  • 1 cup white sugar
  • 2 large eggs
  • 0.33333334326744 cup vegetable oil
  • 1 tablespoon vanilla extract
  • 1.5 teaspoons baking soda
  • 0.5 cup pulp-free orange juice
  • 1.5 tablespoons grated orange zest
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and line 6 large muffin cups with paper liners.
  • Combine sugar and eggs until smoothly blended using a fork or electric mixer. Incorporate vegetable oil, followed by vanilla extract and baking soda. Gently fold in flour, cranberries, orange juice, and orange zest until well combined.
  • Fill each muffin cup to the top with the prepared batter using a spoon.
  • Bake until a toothpick inserted in the center comes out clean, about 20-25 minutes in the preheated oven.
