Whip up delicious orange-cranberry muffins with tangy sour cream perfect for any gathering.
Ingredients:
  • 2 cups all-purpose flour
  • 0.5 cup white sugar
  • 1 large orange, zested
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon baking soda
  • 0.5 cup frozen unsalted butter
  • 0.75 cup dried cranberries
  • 0.5 cup sour cream
  • 1 large egg
  • 3 tablespoons orange juice, or more as needed
  • 1 teaspoon vanilla extract
  • 3 tablespoons white sugar
Instructions:
  • Preheat the oven to 375°F (190°C) while lining a baking sheet with parchment paper.
  • In a large mixing bowl, mix together flour, 1/2 cup sugar, orange zest, baking powder, salt, and baking soda. Grate frozen butter into the dry ingredients using a box grater and combine until it resembles coarse crumbs. Gently stir in cranberries until fully incorporated.
  • In a small mixing bowl, blend together sour cream, egg, orange juice, and vanilla extract until smooth. Add the mixture to the dry ingredients and combine until the dough just holds together and there are no dry ingredients left at the bottom of the bowl. Avoid overmixing.
  • Shape dough into a 10-inch round mound, flatten to 3/4-inch thickness, then sprinkle with remaining 3 tablespoons sugar. Cut into 8 triangles and arrange on baking sheet.
  • Bake in the preheated oven for 17 to 20 minutes until golden. Serve warm or at room temperature.
