Delicious cranberry muffins with a hint of citrus from orange zest and juice, yields 12 muffins.
Ingredients:
  • 1.5 cups all-purpose flour
  • 3 teaspoons baking powder
  • 0.25 cup vegetable oil
  • 1 large egg, beaten
  • 1 cup orange juice
  • 1 tablespoon orange zest
  • 1.5 cups chopped cranberries
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and outfit a 12-cup muffin tin with paper liners.
  • Combine the flour, baking powder, and salt by sifting them together into a bowl.
  • In a large bowl, beat sugar and vegetable oil with an electric mixer until light and fluffy, which should take about 3 minutes. Add the egg and continue beating until smooth. Stir in orange juice and zest. Gently mix in the flour mixture until just combined, then fold in the cranberries. Fill the prepared muffin cups 2/3 full with the batter.
  • Bake in the preheated oven for 20-25 minutes, or until the tops spring back when lightly pressed. Then, cool in the tins briefly before transferring to a wire rack to cool completely.
