Orange cranberry scones with zesty orange cream cheese topping for a perfectly sweet treat.
Ingredients:
  • 0.25 cup orange juice
  • 0.25 cup water
  • 1 cup dried cranberries
  • 2 cups rolled oats
  • 3 cups all-purpose flour
  • 3 tablespoons white sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 cup unsalted butter, cubed
  • 1.3333333730698 cups cold milk
  • 1 large orange, zested
  • 2 tablespoons natural (raw) sugar
  • 1 (8 ounce) package cream cheese
  • 0.5 cup powdered sugar, or as needed
Instructions:
  • Preheat the oven to 375°F (190°C) for a perfectly baked dish.
  • In a small pan, gently warm the orange juice and water. Stir in the cranberries and simmer for 1 minute. Remove from heat and allow the mixture to cool slightly.
  • Pulse oats, flour, 3 tablespoons sugar, baking powder, baking soda, and salt in a food processor or blender until finely ground. Add butter and pulse until mixture resembles sand. Transfer to a large mixing bowl.
  • Combine milk, half of the orange zest, and the orange-cranberry mix in a large mixing bowl. Mix until it starts to form a cohesive mixture.
  • Shape the dough into a large ball, incorporating a splash of milk if needed. Flatten the dough into a 1-inch thick round. Cut into 16 squares or triangles, then sprinkle with the remaining zest and raw sugar before placing on an ungreased baking sheet.
  • Bake scones until lightly golden around the edges, approximately 20 minutes in the preheated oven.
  • As the scones bake, combine cream cheese, 1/2 cup powdered sugar, and orange juice until smooth. Adjust thickness with more powdered sugar if needed.
  • Drizzle the scones with a delicious frosting and enjoy them while they're still warm.
