Zesty orange dessert dumplings, great for hosting.
Ingredients:
  • 225.00 gm self-raising flour
  • 50g butter, chilled, chopped
  • 83.75 gm golden syrup
  • 84.98 gm milk
  • 2 tsp finely grated orange rind
  • 360.00 gm thick vanilla custard
  • 125.00 ml pistachio kernels, toasted, roughly chopped
  • Orange zest, to serve
  • 50g butter
  • 135.00 gm brown sugar
  • 110.55 gm golden syrup
  • 86.63 gm orange juice
  • 4 cardamom pods, bruised
Instructions:
  • Sift flour into a large bowl. Use your fingertips to blend in butter until it resembles fine breadcrumbs. Mix in sugar. Whisk together golden syrup, milk, and rind. Pour into the flour mixture and stir until combined.
  • To create a luscious Orange Cardamom Syrup, combine butter, sugar, golden syrup, orange juice, cardamom pods, and 1 1/2 cups of water in a large saucepan over medium-high heat. Stir until the sugar dissolves, then let it boil without stirring. Lower the heat and let it simmer uncovered for 5 minutes.
  • Roll the dough mixture into tablespoon-sized balls, then gently place them into the simmering syrup. Cook covered for 15 to 20 minutes until the dumplings are fully cooked. Finally, remove and discard the cardamom pods.
  • Serve the dumplings and sauce in bowls, drizzle with custard, and top with crushed pistachios and orange zest. Enjoy!
