Deliciously spiced Orange Whole Wheat Muffins perfect anytime. Enjoy with honey or butter for a divine treat.
Ingredients:
  • For the muffin topping:
  • 1/4 cup chopped walnuts
  • 1/4 cup granulated sugar
  • 1 teaspoon cinnamon
  • For the muffins:
  • 1 1/2 cup (195g) whole wheat pastry flour
  • 1 cup (130g) all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 3/4 cup (164g) granulated sugar
  • 1/4 teaspoon kosher salt
  • 2 teaspoons cinnamon
  • 3/4 teaspoon ground cloves
  • 3/4 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
  • 2 teaspoons orange zest (from about 1 large orange)
  • 1 1/4 cups buttermilk
  • 1/4 cup applesauce
  • 5 tablespoons butter, melted
  • 1 teaspoons vanilla extract
  • 3/4 cup chopped walnuts
Instructions:
  • Prepare the pans and oven by placing cupcake liners in a muffin tin and preheating the oven to 400°F.
  • Prepare the irresistible muffin topping by mixing together 1/4 cup of chopped walnuts, 1/4 cup of granulated sugar, and 1 teaspoon of fragrant cinnamon in a small bowl. Set it aside for the perfect finishing touch.
  • In a large bowl, whisk together whole wheat pastry flour, all-purpose flour, baking powder, baking soda, granulated sugar, salt, cinnamon, cloves, ground ginger, nutmeg, and orange zest until well combined.
  • Create the batter by gently whisking eggs, buttermilk, applesauce, melted butter, and vanilla extract in a small bowl. Combine the wet ingredients with the dry ingredients until mostly mixed with a few flour streaks remaining. Fold in 3/4 cup walnuts until just combined. Avoid overmixing to ensure light and fluffy muffins.
  • Fill each muffin cup to the brim with batter, ensuring they are full but not overflowing. Top each muffin with a generous sprinkle of walnut and cinnamon sugar mixture.
  • Bake the muffins in a preheated oven at 350°F for 18 minutes or until the tops have risen and a toothpick inserted in the center comes out clean. If needed, cut any touching muffin tops with a knife before gently removing them from the pan. Enjoy warm with butter and honey. Store in an airtight container for up to 5 days at room temperature or freeze for up to 3 months in a zip-top bag.
