Make healthier walnut-orange breakfast muffins by using almond milk instead of oil.
Ingredients:
  • 1.25 cups whole wheat flour
  • 0.25 cup ground flaxseed
  • 1 teaspoon baking soda
  • 1 cup orange juice
  • 2 egg whites
  • 0.33333334326744 cup almond milk
  • 3 tablespoons brown sugar
  • 2 tablespoons honey
  • 0.5 cup chopped walnuts
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and prepare a 12-cup muffin tin with either greased cups or paper liners.
  • Combine all-purpose flour, whole wheat flour, flaxseed, baking soda, and salt in a small bowl and mix well.
  • In a large bowl, whisk together orange juice, egg whites, almond milk, brown sugar, and honey until smooth. Gently mix in the flour mixture until just combined. Fold in walnuts, then spoon batter into muffin cups.
  • Bake until muffins are golden and a toothpick comes out clean, 15 to 20 minutes. Allow to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
