Grilled pork sausages paired with refreshing Greek salad for an easy and delicious weeknight meal.
Ingredients:
  • 1 1/2 tsp ground oregano
  • 8 (about 660g pkt) extra-lean pork sausages
  • 200g 97% fat-free semi-dried tomatoes
  • 1 Lebanese cucumber, halved lengthways, coarsely chopped
  • 1 ripe avocado, halved, stone removed, peeled, chopped
  • 140g low-fat feta, cut into cubes
  • 80g pitted kalamata olives
  • 1 green oakleaf lettuce, washed, dried, leaves separated
Instructions:
  • Preheat the grill until hot. Mix 1 tablespoon of oil with oregano in a bowl. Brush the pork sausages with the oregano oil mixture. Then, place them on a baking tray and grill for 3-4 minutes on each side, about 6cm from the heat, until browned and cooked through.
  • In a large bowl, mix together the tomatoes, cucumber, avocado, feta, and olives. Drizzle with the remaining oil and toss gently to combine. Serve the pork sausages on a bed of lettuce alongside the Greek salad.
