Tender pork cooked with tomatoes, ancho chile powder, and oregano in a slow cooker. Serve over rice or as a flavorful burrito filling.
Ingredients:
  • 2.5 pounds pork tenderloin
  • 2 (14.5 ounce) cans Hunt's® Diced Tomatoes, undrained
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 0.25 cup water
  • 1 tablespoon dried oregano
  • 1 tablespoon brown sugar
  • 2 teaspoons ground ancho chile powder
Instructions:
  • Add the pork tenderloin to the cozy slow cooker.
  • Combine tomatoes, onion, garlic, water, oregano, brown sugar, and ancho chile powder in a bowl, then generously pour over the pork tenderloin.
  • Slow cook, covered, for 6 hours on Low heat.
  • Take out the tenderloin from the slow cooker and cut it into slices or chop it. Serve it with a generous topping of tomato sauce from the slow cooker.
