Slow-Cooker Pork Tenderloin with Bacon and Mushroom Gravy

Slow-cooked tenderloin with bacon and mushroom gravy, perfect for topping pork and mashed potatoes.
Ingredients:
  • 4 slices applewood smoked bacon, chopped
  • 1 package (8 oz) baby bella mushrooms, sliced
  • 2 teaspoons finely chopped garlic (about 2 cloves)
  • 1 pork tenderloin (1 1/4 lb), trimmed of silver skin
  • 3 tablespoons butter
  • 1 can (18 oz) Progresso™ Vegetable Classics creamy mushroom soup
  • 1 tablespoon chopped fresh sage leaves
  • 2 teaspoons chopped fresh rosemary leaves
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • Additional chopped fresh sage leaves and rosemary leaves for garnish, if desired
  • Betty Crocker™ roasted garlic mashed potato mix, prepared as directed on package, if desired
Instructions:
  • Prepare the slow cooker by spraying with cooking spray. In a skillet, crisp bacon over medium heat for 12 to 14 minutes. Transfer bacon to a paper towel-lined plate using a slotted spoon. Cook mushrooms in the bacon drippings for 5 to 6 minutes until tender, then add garlic and cook for 30 to 60 seconds until fragrant. Transfer the mixture to a medium bowl.
  • Season the pork tenderloin generously with freshly ground black pepper. In a skillet, melt 1 tablespoon of butter over medium heat, then sear the pork for 1 to 2 minutes on each side until beautifully browned. Transfer the pork to a slow cooker. Combine the cooked bacon, soup, sage, and rosemary with the mushroom mixture in a bowl, ensuring everything is well mixed. Pour this flavorful mixture on top of the pork in the slow cooker.
  • Cover and simmer gently on Low heat for 3 to 3 1/2 hours until a meat thermometer registers at least 145°F when inserted into the center of the pork. Transfer the pork from the slow cooker to a cutting board, cover, and keep warm.
  • Combine cornstarch and water in a small bowl, then stir into the mushroom gravy in the slow cooker. Cover and cook on High heat for 15 to 20 minutes until bubbly and thickened, then stir in the remaining 2 tablespoons of butter.
  • Slice the pork, top it with savory mushroom gravy, and sprinkle with fresh sage and rosemary. Pair with creamy mashed potatoes for a delectable meal.
