Southern-style sausage stew

Indulge in this nutritious and flavorful dish. Brown rice for stable blood sugar and satiety. Tomatoes for Vitamin C and green pepper for Vitamin E. Upgrade with pork & oregano sausages or opt for regular high-quality pork sausages.
Ingredients:
  • 4 higher-welfare pork & oregano sausages
  • 1 onion
  • 1 stick of celery
  • 1 green pepper
  • 2 cloves of garlic
  • 150 g brown rice
  • 1 teaspoon smoked paprika
  • 1 fresh green chilli
  • 1 organic vegetable stock cube or pot
  • 200 g ripe tomatoes
  • 1 tablespoon plain flour
  • 1 tablespoon red wine vinegar
  • 2 spring onions
Instructions:
  • Boil salted water in a medium pan. Heat oil in a deep sided pan. Pierce sausages and cook until browned. Prep onion, celery, pepper, and garlic. Cook rice in boiling water for 25 minutes. Drain and set aside. Brown sausages, remove, and leave some fat in the pan. Add oil, veggies, garlic, paprika, and chili. Cook covered until soft. Dissolve stock cube in boiling water. Chop tomatoes. Sprinkle flour over veggies, stir, add tomatoes, vinegar, sausages, and stock. Simmer until sauce thickens. Slice spring onions. Season stew and rice, divide between plates, top with spring onions, and serve.
