Southern-style sausage and grits casserole bursting with flavor. Customize with eggs and your preferred cheese.
Ingredients:
  • 1 lb ground pork sausage
  • 5 cups water
  • 2 teaspoons salt
  • 1 cup uncooked quick-cooking grits
  • 1 cup shredded sharp Cheddar cheese (4 oz)
  • 4 oz cream cheese, cut into small cubes
  • 1/4 teaspoon black pepper
  • 6 eggs
  • Salt and pepper
  • 2 tablespoons chopped fresh chives
Instructions:
  • Preheat the oven to 350°F and lightly grease a 13x9-inch (3-quart) baking dish with cooking spray.
  • Cook sausage in a 10-inch skillet over medium heat until fully cooked and browned. Make sure to drain well before proceeding.
  • In a 3-quart saucepan, bring water to a boil over medium-high heat. Add salt and whisk in grits until smooth. Simmer covered for 6 to 8 minutes, stirring occasionally. Add Cheddar cheese, cream cheese, and pepper, stirring until melted. Mix in crumbled drained sausage, then transfer to a baking dish.
  • After baking for 15 minutes, gently create 6 indentations in the grits using the back of a large ladle or spoon. Crack 1 egg into each indentation and season with salt and pepper.
  • Bake until the eggs are cooked to your desired level, about 12 to 15 minutes. Finish off with a sprinkle of fresh chives for a burst of flavor.
