Revamp your brunch with a healthier version of Sausage and Cheese Grits, with low-fat cheese, fat-free egg product, and a spicy kick of hot sauce.
Ingredients:
  • 1/2 lb spicy bulk pork sausage
  • 4 cups water
  • 1 cup uncooked quick-cooking corn grits
  • 1 1/2 cups shredded reduced-fat sharp Cheddar cheese
  • 2 tablespoons butter or margarine
  • 1/2 cup fat-free egg product
  • 1 tablespoon chopped fresh parsley, if desired
  • Frank's™ RedHot™ Original cayenne pepper sauce, if desired
Instructions:
  • Preheat oven to 350°F and generously coat a 2 1/2- or 3-quart casserole with cooking spray.
  • Cook the sausage in a 10-inch skillet over medium heat for 7 to 9 minutes, stirring occasionally, until it is no longer pink; then drain any excess fat.
  • In a 3-quart saucepan, bring water and salt to a boil. Gradually add grits and simmer covered for 5 to 7 minutes until thickened. Remove from heat and stir in 1 cup of cheese and butter until melted, followed by sausage and egg product. Transfer the mixture to a casserole dish and top with the remaining 1/2 cup of cheese.
  • Bake for 25 to 30 minutes until the center is set. Sprinkle with fresh parsley, cool for 10 minutes, and enjoy with hot sauce.
