Sausage and Cheese Fluffins

Use your favorite sausage for these delicious no-knead fluffins.
Ingredients:
  • 2.75 cups all-purpose flour*
  • 1 (.25 ounce) envelope Fleischmann's® RapidRise Yeast
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 teaspoon Spice Islands® Italian Herb Seasoning
  • 1.25 cups very warm water (120 to 130 degrees F)
  • 1 tablespoon Mazola® Corn Oil
  • 1.25 cups cooked, crumbled sausage
  • 1 cup 1/4-inch cubed mozzarella cheese
  • Pizza sauce
Instructions:
  • In a large mixer bowl, blend together 1-1/2 cups flour, yeast, sugar, salt, and Italian herb seasoning. Mix in water and oil on medium speed for 2 minutes. Slowly incorporate the remaining 1-1/4 cups flour until a stiff, slightly sticky dough forms. Gently fold in sausage and cheese. Cover the bowl and allow the dough to rest for 10 minutes before proceeding.
  • Divide the dough into 12 (2-1/2 inch) muffin cups or 36 mini muffin cups that have been generously greased using a scoop or two spoons (avoid using paper liners). Cover and allow to rise for 35 to 45 minutes until slightly increased in size.
  • Preheat your oven to 375 degrees F. Bake the rolls for 20 to 25 minutes (17 to 20 minutes for minis) until they are nicely browned. Allow them to cool on a wire rack for 2 minutes, run a knife around each roll to remove from the pan, and serve warm with pizza sauce for dipping, if desired. Remember to refrigerate any leftovers.
