Delicious low-carb sausage and cheese balls made with ground pork rinds instead of breadcrumbs for a keto twist on meatballs.
Ingredients:
  • 1 pound pork sausage, casings removed
  • 1 pound spicy Italian sausage, casings removed
  • 1 cup crushed pork rinds
  • 1 cup shredded mozzarella cheese
Instructions:
  • Preheat your oven to 375°F (190°C) for the perfect cooking temperature.
  • Mix together the pork sausage, Italian sausage, pork rinds, and mozzarella cheese in a bowl until well combined. Shape the mixture into approximately 48 evenly sized meatballs and place them in a shallow baking pan.
  • Bake the meatballs in the oven until they are nicely browned and reach an internal temperature of at least 160°F (70°C), approximately 20 minutes.
