Garlic-infused toasted orzo pasta paired with cherry tomatoes, basil, and gorgonzola cheese in a savory Italian side dish.
Ingredients:
  • 1.5 tablespoons olive oil
  • 1 cup uncooked orzo pasta
  • 1 red onion, chopped
  • 1.25 cups vegetable broth
  • 1 pint cherry tomatoes, halved
  • 12 leaves fresh basil, chopped
  • 1 cup crumbled Gorgonzola cheese, or to taste
Instructions:
  • In a saucepan over medium heat, heat 1 1/2 tablespoons of olive oil. Add orzo pasta and cook until lightly browned, about 3 to 4 minutes. Add onion and cook until softened, about 3 minutes. Stir in 1 clove of garlic and cook for 30 seconds until fragrant. Pour in vegetable broth and bring to a boil over high heat. Reduce heat to medium-low, cover, and simmer until orzo is tender but still slightly firm, about 12 to 14 minutes.
  • Combine sweet, juicy cherry tomatoes, fragrant fresh basil, pungent garlic, and extra virgin olive oil in a mixing bowl.
  • Transfer the cooked orzo to a serving bowl. Add the tomato mixture on top, then sprinkle with Gorgonzola cheese and the rest of the basil leaves.
