Make a quick orzo salad with chicken, cherry tomatoes, basil, and feta - perfect for a delicious weeknight meal or easy office lunch.
Ingredients:
  • 1.25 cups uncooked orzo pasta
  • 3 cups chopped grilled chicken breasts
  • 1 cup cherry tomatoes, halved
  • 0.25 cup chopped red onion
  • 2 tablespoons chopped fresh basil
  • 1 teaspoon chopped fresh oregano
  • 0.25 cup red wine vinegar, or more to taste
  • 2 tablespoons extra-virgin olive oil, or more to taste
  • 0.125 teaspoon kosher salt
  • 0.125 teaspoon cracked black pepper
  • 1 (2 ounce) can sliced black olives, or to taste
  • 2 ounces crumbled feta cheese
Instructions:
  • 1. Boil a large pot of water. Cook orzo in the boiling water, stirring occasionally until al dente, about 11 minutes. Drain and rinse with cold water.
  • In a large bowl, toss together the orzo, chicken, tomatoes, red onion, basil, and oregano.
  • Combine vinegar, oil, salt, and pepper in a bowl and whisk. Pour the dressing over the pasta, toss well to coat. Garnish with olives and feta cheese.
