Savory cacciatore, perfect with pasta too!
Ingredients:
  • 18.20 gm olive oil
  • 6 chicken thigh fillets, trimmed, halved
  • 1 garlic clove, crushed
  • 125.00 gm dry white wine
  • 400g can diced tomatoes with roasted capsicum
  • 5.00 gm caster sugar
  • 127.50 gm chicken style liquid stock
  • 62.50 ml finely chopped fresh flat-leaf parsley leaves
  • 82.50 ml pitted black olives, halved
  • Couscous, to serve
  • Steamed broccolini, to serve
Instructions:
  • In a deep frying pan, heat oil over medium-high heat. Brown chicken for 5 minutes. Place on a plate.
  • Sauté onion and garlic in a pan for 5 minutes until onion is soft. Pour in wine and simmer for 2 to 3 minutes until reduced by half. Stir in tomato, sugar, and stock; bring to a boil.
  • Add the chicken back to the pan and simmer gently over medium-low heat, partially covered, for 20 to 25 minutes until the chicken is fully cooked.
  • Garnish with fresh parsley and briny olives. Season generously with salt and pepper. Saute, stirring constantly, for 2 minutes or until warmed. Plate the couscous, top with the savory chicken mixture, and serve alongside broccolini.
