Family Picnic Cake: Upgrade with cream for a decadent twist!
Ingredients:
  • 8 tablespoons shortening
  • 2 (1 ounce) squares unsweetened chocolate, melted
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 cup milk
  • 1 cup white sugar
  • 1.75 cups all-purpose flour
  • 0.5 teaspoon salt
  • 2.5 teaspoons vanilla extract
  • 1 teaspoon instant coffee granules
  • 0.25 cup milk
  • 0.25 cup unsweetened cocoa powder
  • 6 tablespoons butter
  • 5 cups confectioners' sugar
  • 1.5 teaspoons vanilla extract
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C and lightly grease a 13x9 inch cake pan.
  • Combine the shortening and white sugar until creamy. Mix in the melted chocolate and eggs thoroughly.
  • Sift together flour, baking soda, and salt. Alternate adding this mixture with 1 cup of milk to the shortening mixture. Stir in 1 teaspoon of vanilla and pour the batter into the prepared pan.
  • Bake at 350 degrees F for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let the cake cool and then frost with Coffee Frosting.
  • Prepare a delectable frosting by combining instant or leftover coffee, 1/4 cup of milk or cream, cocoa powder, butter, 1 1/2 teaspoons of vanilla extract, and confectioners' sugar until smooth and easy to spread.
