Zucchini slices coated in buttery breadcrumbs and Parmesan, baked to crispy perfection.
Ingredients:
  • 0.75 cup Italian seasoned bread crumbs
  • 0.25 cup grated Parmesan cheese
  • 0.25 teaspoon seasoned salt
  • 1 (9 inch) zucchini, peeled
  • 0.25 cup margarine or butter, melted
Instructions:
  • Preheat your oven to a toasty 425 degrees F (220 degrees C) and prepare a baking sheet lined with lightly greased parchment paper or aluminum foil.
  • Cut the peeled zucchini in half lengthwise, remove the seeds, and slice into 1/2 x 1/2 x 4 inch pieces.
  • In a pie plate, mix bread crumbs, cheese, and seasoned salt. Dip zucchini fries in melted margarine, coat with bread crumbs, gently shake off excess, then place on baking sheet.
  • Roast the zucchini in the preheated oven until the fries turn golden and tender, approximately 15 minutes.
