Lemon oil wedged potatoes baked to perfection.
Ingredients:
  • 1 tablespoon lemon juice
  • 2 large baking potatoes, cut into wedges
Instructions:
  • Preheat the oven to 425 degrees F (220 degrees C), then prepare a baking sheet by lining it with aluminum foil and spraying it with vegetable cooking spray.
  • Combine the oil and lemon juice in a shallow bowl. Dip the potatoes in the oil and lemon mixture, then season with salt and pepper to taste before placing them on a baking sheet.
  • Bake in a preheated oven for 20 minutes until golden. Flip wedges over and bake until crisp and brown on both sides, about 10 more minutes.
