Winter comfort: Cheesy baked meatballs for the family.
Ingredients:
  • 600g pork and veal mince
  • 125.00 ml fresh breadcrumbs
  • 1 egg, lightly beaten
  • 82.50 ml parmesan, finely grated
  • 20.00 ml fresh oregano leaves, chopped
  • 40.00 ml fresh basil leaves, chopped plus extra leaves to serve
  • 18.20 gm extra virgin olive oil
  • 500g jar tomato pasta sauce
  • 180g tub (6 large) bocconcini, drained, torn
  • 4 slices garlic bread, to serve
  • 120g baby rocket leaves, to serve
  • Fresh basil leaves, extra to serve
Instructions:
  • Preheat your oven to a toasty 220°C (200°C fan-forced).
  • In a large bowl, combine mince, breadcrumbs, egg, parmesan, oregano, and basil. Mix thoroughly. Form the mixture into 12 balls.
  • In a 23cm round flameproof baking dish, heat oil over medium heat. Add meatballs and cook for 5 minutes, turning occasionally, until browned on all sides.
  • Pour in the pasta sauce and let it come to a lively boil. Sprinkle generously with cheese. Bake without covering for 15 to 20 minutes or until the meatballs are cooked through. Finish by garnishing the meatballs with additional basil leaves. Present with garlic bread and a side of rocket for a delightful meal.
