Oven-Roasted Pork Chops and Vegetables

Indulge in juicy pork chops and vibrant veggies, oven-baked with Frozen Whole Green Beans for a delicious dinner tonight.
Ingredients:
  • 2 tablespoons frozen apple juice concentrate
  • 1 tablespoon olive or vegetable oil
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon seasoned salt
  • 1/2 teaspoon dried marjoram leaves
  • 1/2 teaspoon garlic-pepper blend
  • 4 bone-in center-cut pork chops (1/2 inch thick), trimmed of fat
  • 1 1/2 cups fresh baby carrots
  • 1 medium red onion, cut into 8 wedges
  • 2 cups frozen whole green beans
Instructions:
  • Preheat oven to 425°F. Grease a 15x10x1-inch baking pan with nonstick cooking spray. In a large bowl, mix together apple juice concentrate, oil, mustard, seasoned salt, marjoram, and garlic-pepper blend until well combined.
  • Brush half of the oil mixture onto the pork chops and set them aside. Toss carrots and onion in the remaining oil mixture until coated. Arrange coated vegetables in a pan and bake at 425°F for 15 minutes.
  • Take the vegetables out of the oven and mix in the green beans gently. Place the pork chops on top of the vegetable mixture.
  • Continue baking in the oven for an extra 30 to 40 minutes until pork chops are cooked through and vegetables are tender. Serve everything with the delicious pan drippings.
