Overnight Cinnamon Rolls I

Overnight rise rolls for a stress-free morning bake. Simply divine!
Ingredients:
  • 0.33333334326744 cup butter
  • 1 (.25 ounce) package active dry yeast
  • 4.5 cups all-purpose flour
  • 3 eggs
  • 0.75 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 0.5 cup raisins
  • 1 teaspoon light corn syrup
  • 0.5 teaspoon vanilla extract
  • 1.25 cups sifted confectioners' sugar
  • 2 tablespoons half-and-half cream
Instructions:
  • In a small saucepan, gently heat the milk until it just begins to bubble. Take it off the heat, then stir in the butter until fully melted. Allow the mixture to cool until it reaches a comfortable lukewarm temperature.
  • In a large mixing bowl, blend the yeast with the milk. Add sugar, 3 cups of flour, salt, and eggs; mix thoroughly. Gradually add the remaining flour, 1/2 cup at a time, stirring well after each addition. Once the dough comes together, transfer it to a lightly floured surface and knead until smooth and elastic, approximately 8 minutes.
  • Oil a large mixing bowl, place the dough inside, and gently toss to coat with the oil. Cover with a damp cloth and allow to rise in a warm spot until doubled in size, approximately 1 hour.
  • Punch down the dough and place it on a lightly floured surface. Roll it out into a 10x14 inch rectangle. Brush the far edge with water. Mix cinnamon and 3/4 cup brown sugar in a small bowl and spread over the dough. Sprinkle raisins and chopped nuts on top. Roll the dough into a log and seal the seam.
  • Divide the dough into 12 equal pieces and arrange them in a greased 9x13 inch baking pan or 12-inch deep dish pizza pan. Cover with plastic wrap and refrigerate overnight for a perfect rise.
  • The following morning, preheat oven to 375°F (190°C). Bring the rolls to room temperature by letting them sit out for 30 minutes after removing them from the refrigerator.
  • Bake the rolls until golden, for about 25 to 30 minutes. While the rolls are baking, mix corn syrup and vanilla in a small bowl. Stir in powdered sugar and cream to make a thick glaze. Drizzle the glaze over the warm rolls before serving.
