Overnight Eggnog Streusel Coffee Cake

Chill homemade coffee cake overnight for a fresh and effortless bake.
Ingredients:
  • 1/3 cup granulated sugar
  • 1 tablespoon Gold Medal™ all-purpose flour
  • 1 tablespoon butter or margarine, softened
  • 1/2 teaspoon ground nutmeg
  • 1 cup granulated sugar
  • 1/2 cup butter or margarine, softened
  • 1 cup eggnog
  • 1 container (8 ounces) sour cream
  • 1 teaspoon rum extract
  • 2 eggs
  • 2 1/2 cups Gold Medal™ all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup powdered sugar
  • 1 to 2 tablespoons eggnog
Instructions:
  • Grease the bottom of a rectangular 13x9x2-inch pan with shortening for easy removal of baked goods.
  • Combine all Streusel Topping ingredients in a small bowl and mix with a fork until crumbly; set aside.
  • In a large bowl, mix 1 cup granulated sugar and 1/2 cup butter using an electric mixer or a spoon. Add 1 cup eggnog, sour cream, rum extract, and eggs, and mix until combined. Then, stir in 2 1/2 cups flour, baking powder, baking soda, and salt. Spread the batter in a pan and sprinkle the Streusel Topping over it. Cover and refrigerate for at least 8 hours.
  • Preheat oven to 350°F. Bake uncovered for 35-40 minutes or until a toothpick inserted in the center comes out clean. Allow to cool for 20 minutes before serving.
  • Mix all Eggnog Glaze ingredients in a small bowl until smooth and pourable. Drizzle over coffee cake and cut into 5 rows by 3 rows for serving.
