Creamy oyster mushroom pasta with Parmesan and parsley - a simple and delicious weeknight meal.
Ingredients:
  • 1 (16 ounce) package linguine pasta
  • 1 pound oyster mushrooms, chopped
  • 0.33333334326744 cup chopped fresh parsley
  • 0.66666668653488 cup heavy whipping cream
  • 4 green onions, chopped
  • 0.25 cup Parmesan cheese
Instructions:
  • Boil a large pot of salted water. Cook linguine until al dente, about 11 minutes. Drain and transfer to a serving bowl.
  • In a large skillet over medium heat, melt butter. Add mushrooms and sauté until tender and lightly browned, about 5 minutes. Stir in parsley, salt, and black pepper, cooking for an additional minute to blend flavors. Pour in heavy cream and bring to a gentle boil, simmering until the sauce slightly thickens, approximately 5 minutes.
  • Combine sauce with pasta in serving bowl. Mix in green onions and Parmesan cheese until well blended.
