Oysters with Japanese dressing

Serve up irresistible Japanese oysters and they'll disappear in seconds at your cocktail party.
Ingredients:
  • 15.90 gm soy sauce
  • 60ml rice vinegar
  • 1/2 tsp finely grated ginger
  • 16 freshly shucked Pacific oysters
  • 1 Lebanese cucumber, cut into julienne
  • 50g flying fish (tobikko) or salmon roe
Instructions:
  • Mix together the soy sauce, vinegar, and ginger in a small bowl, then chill in the refrigerator until needed.
  • Before serving, arrange oysters on a bed of crushed ice or rock salt, drizzle with dressing, and garnish with cucumber and roe. Serve immediately.
