Oysters with wasabi granita & pickled ginger

Savory, refreshing, and fiery appetizers for a flavor explosion.
Ingredients:
  • 60ml (1/4 cup) soy sauce
  • 24 natural oysters (such as Sydney rock oysters), in the half shell
  • Pickled ginger, to serve
  • 60ml (1/4 cup) water
  • 40.00 gm caster sugar
  • 42.00 gm fresh lime juice
  • 20.00 ml wasabi paste
Instructions:
  • In a small saucepan over medium-low heat, combine water, sugar, and lime juice. Cook until the sugar dissolves, about 5 minutes. Add the wasabi, then let it cool before serving.
  • Pour the wasabi mixture into a sealed container and freeze for 30 minutes until edges are icy. Use a fork to break up the mixture roughly. Keep in the freezer for 4 hours, stirring with a fork every 30 minutes until firm and forming coarse crystals.
  • Spoon soy sauce, wasabi granita, and ginger onto each oyster.
