Savory chicken liver and pork sausage pate, wrapped in crispy bacon.
Ingredients:
  • 1 pound chicken livers
  • 1 pound lean pork
  • 1 pound mild Italian sausage meat
  • 1 tablespoon chopped chives or scallions
  • 1 tablespoon fresh coarsely ground pepper
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon cinnamon
  • 1 teaspoon kosher salt
  • 2 tablespoons brandy
  • 2 tablespoons dry sherry
  • 10 slices bacon (uncooked)
Instructions:
  • Preheat your oven to a toasty 350°F.
  • Run the chicken livers, pork, and Italian sausage through a meat grinder twice. Combine with remaining ingredients, excluding the bacon, and ensure thorough mixing.
  • Prepare the loaf pan by lining it with bacon strips, then fill it with the meat mixture and top it with more bacon strips for a delicious touch.
  • To create a luxurious, silky texture: Set the pan in a water bath, gently pouring water halfway up the sides of the inner pan. Bake deliciousness at 350°F for 2 1/2 hours.
  • Remove the dish from the oven and cover it with aluminum foil. Place a heavy weight, like a brick, on top to compress while cooling. Refrigerate overnight for the best results.
  • Serve the dish by slicing it and pairing it with bread or toast, along with fresh lettuce and tomatoes.
