Whip up a quick and delicious Pad Thai served with salmon in under 20 minutes.
Ingredients:
  • 150g dried flat rice noodles
  • 18.40 gm vegetable oil
  • 4 skinless salmon fillets
  • 150g green beans, cut diagonally into 5cm pieces
  • 1 red capsicum, seeded, thinly sliced
  • 4 spring onions, white and green parts separated, thinly sliced diagonally
  • 150g pkt Marketplace Pad Thai recipe base
  • 6.00 gm sesame seeds, toasted
  • 62.50 ml coriander leaves
Instructions:
  • Prepare noodles as per instructions on the packet by boiling them in a saucepan of water. Once cooked, cool them down under cold water and ensure they are well drained.
  • Heat oil in a large deep frying pan over medium-high heat. Cook salmon for 3 minutes on each side until just cooked through. Transfer to a plate.
  • Toss in the beans, capsicum, and white parts of spring onion. Stir-fry for 3 minutes until the beans are tender. Add the recipe base and noodles, continue stir-frying for another 3 minutes until everything is well combined and heated through.
  • Plate the noodle mixture in serving dishes, then place the salmon on top. Finish by sprinkling sesame seeds, coriander, and the rest of the spring onion.
