  • 2 eggs, beaten
  • 20.00 ml grated fresh ginger
  • 1 garlic clove, chopped
  • 2 red chillies, seeded, finely chopped

  • 20ml (1 tbsp) light soy sauce
  • 20ml (1 tbsp) fish sauce
  • 20ml (1 tbsp) lime juice
  • 1 bunch spring onions, washed, finely chopped
  • 80.00 ml chopped fresh coriander
Instructions:
  • Immerse the shrimp in 1/4 cup of hot water for 10 minutes, then remove and drain.

  • In a hot wok, add the remaining oil and toss in ginger, garlic, chili, and shrimp. Stir-fry briefly. Toss in rice and stir-fry for 1 minute. Add peanuts, soy sauce, fish sauce, lime juice, onion, and egg. Stir everything just until combined. Finally, mix in the coriander and serve.
