Decadent paleo vegan hot cocoa with cocoa powder, maple syrup, and your choice of milk.
Ingredients:
  • For the chocolate syrup
  • 1/3 cup water
  • 1/3 cup unsweetened cocoa powder
  • Pinch of salt
  • 1/2 cup maple syrup
  • 1 tablespoon vanilla
  • 1/2 tablespoon espresso powder (optional)
  • To serve
  • 1 cup milk per person (like coconut milk, almond milk, dairy milk, or other favorite milk)
  • Sweetener of your choice, like maple syrup or honey (optional)
  • Coconut whipped cream (optional)
  • Dark chocolate shavings (optional)
Instructions:
  • Bring the water to a boil either in the microwave or on the stovetop.
  • Prepare the cocoa syrup by combining cocoa powder and salt in a heat-proof bowl, then pouring boiling water over them. Whisk until smooth and let it rest for five minutes. Stir in maple syrup, vanilla, and espresso powder until well mixed. Use it right away or cool before storing in an airtight container in the fridge for up to several weeks.
  • Prepare the cocoa: Heat the milk (1 cup per person) until warm using the microwave or stovetop. Pour into a mug and mix in 2 tablespoons of syrup per cup. Adjust sweetness by adding more syrup or sweetener to taste.
