Paleo multi-seed bread

Make Paleo bread with this clever recipe.
Ingredients:
  • 300g almond meal
  • 180g arrowroot powder
  • 60g ground flaxseeds
  • 82.50 ml pepitas
  • 82.50 ml sunflower seeds
  • 40.00 ml black chia seeds
  • 4.80 gm salt
  • 2.50 gm bicarbonate soda, sifted
  • 9.00 gm sesame seeds
  • 1 tsp poppy seeds
  • 1/2 tsp caraway seeds
  • 8 eggs
  • 2 tsp apple cider vinegar
Instructions:
  • Preheat your oven to 180°C (160°C fan-forced). Grease and line an 11cm x 22cm loaf pan with baking paper for easy removal later.
  • In a large bowl, mix together almond meal, arrowroot, flaxseed, pepitas, sunflower and chia seeds, salt, and bicarbonate soda. In a separate small bowl, combine sesame, poppy, and caraway seeds.
  • In a large bowl, vigorously whisk eggs until foamy. Mix in vinegar, then add the almond mixture and stir until well combined. Transfer the mixture into the prepared pan, sprinkle with the sesame seed mixture, and bake for 1 hour or until a skewer inserted in the center comes out clean. Let it cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
