Paleo Persimmon Pie

Uncooked paleo persimmon pie - fresh and flavorful!
Ingredients:
  • 0.5 teaspoon olive oil
  • 3 cups pecans
  • 20 pitted dates
  • 0.25 cup agave nectar
  • 6 ripe persimmons
  • 2 tablespoons chopped pecans
  • 1 teaspoon ground cinnamon, for garnish
Instructions:
  • Coat an 8-inch pie pan with a touch of fragrant olive oil.
  • In a food processor, finely grind 3 cups of pecans and dates for about 1 minute. Add agave nectar to the nut mixture and process until fully mixed, approximately 30 seconds. Press the mixture evenly into the prepared pie pan.
  • Peel and remove seeds from persimmons, then blend in food processor until creamy. Spread over crust evenly. Top with chopped pecans and a sprinkle of cinnamon for a beautiful finish.
