Create tender, flaky stovetop salmon fillets in olive oil, crisp up the skin separately for a delicious dish.
Ingredients:
  • 2 (3 ounce) fillets salmon, with skin
  • sea salt to taste
  • 2 tablespoons olive oil
Instructions:
  • Prepare the salmon fillets by rinsing them, patting dry with paper towels, and seasoning generously with sea salt.
  • In a large skillet, warm the olive oil over medium-high heat.
  • Sear salmon fillets in hot oil until golden brown on both sides, about 5-7 minutes per side. Use a slotted spatula to transfer salmon to a plate, keeping the flavorful drippings in the skillet.
  • Peel skin off salmon; fry it in the skillet drippings until crispy, for 2 to 3 minutes. Serve the crispy skin with the salmon.
