Crispy pan-fried zucchini slices with a cornmeal coating - perfect as a versatile and flavorful snack, side dish, or pasta topping!
Ingredients:
  • 3 zucchini
  • 0.25 cup yellow cornmeal
  • 2 tablespoons olive oil
  • salt and pepper to taste
Instructions:
  • Start by giving the zucchini a good wash and dry. Trim off the ends, then slice them into 1/8-inch thick rounds. Next, place the cornmeal in a medium bowl and toss in the zucchini slices, making sure they are evenly coated.
  • In a large nonstick skillet over medium heat, heat oil. Add zucchini slices and fry until golden brown on both sides, making sure to sprinkle with salt and pepper. If browning too quickly, add more oil. It's okay if the slices clump together as they cook. Enjoy!
