Pan-seared sea scallops in a flavorful blend of clarified butter, garlic, and lemon for a crispy, golden finish.
Ingredients:
  • 12 medium sea scallops
  • 1 teaspoon salt, or more to taste
  • 5 tablespoons clarified butter (ghee), warm
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 3 tablespoons clarified butter (ghee)
Instructions:
  • Season scallops with a sprinkle of salt in a bowl. Refrigerate covered for 30 minutes.
  • Whisk together warm butter, lemon juice, and garlic until well combined in a bowl. Allow the flavorful mixture to rest at room temperature for 30 minutes.
  • Allow the scallops to sit at room temperature for 20 to 30 minutes after removing them from the refrigerator.
  • In a nonstick pan over medium-high heat, melt 3 tablespoons of butter without letting it smoke. Brush scallops with garlic mixture, then sear them until golden on one side for about 2 minutes. Flip scallops, brush with more garlic mixture, and cook for another 2 minutes. Remove pan from heat, allowing scallops to rest and finish cooking off the heat for 5 minutes. Plate and serve.
