Pan-fried mahi mahi fillets with Old Bay® panko crust served with veggies and rice.
Ingredients:
  • 3 tablespoons olive oil, divided
  • 0.5 cup garlic- and herb-seasoned panko bread crumbs
  • 2 cloves fresh garlic, finely chopped
  • 1 lemon, zested
  • 1.5 teaspoons seafood seasoning (such as Old Bay®)
  • 1 teaspoon salt, divided
  • 4 (5 ounce) mahi mahi fillets
Instructions:
  • Heat a large saucepan over medium heat for 2 to 3 minutes. Pour in 2 tablespoons of oil, followed by the panko. Toast and stir until lightly golden, which should take 2 to 3 minutes. Mix in the garlic and continue cooking until fragrant and the panko turns golden brown, about 1 to 2 minutes.
  • Pour the bread crumb mixture into a small bowl. Mix in the lemon zest, seafood seasoning, and 1/4 teaspoon of salt until well combined. Set it aside for later use.
  • Clean the saucepan and pour in the rest of the oil. Season fish fillets with the remaining salt and place them in the pan.
  • Sear until both sides are golden, about 2 to 3 minutes each. Use an instant-read thermometer to ensure it reaches a safe 145°F (63°C) in the center.
  • Present the fish adorned with a crispy breadcrumb topping.
