Whip up tasty pancetta and chicken club sandwiches in 30 minutes.
Ingredients:
  • 2 (about 200g each) single chicken breast fillets
  • 20.00 ml sumac (MasterFoods brand)
  • 9.20 gm olive oil
  • 12 slices mild pancetta
  • 125g (1/2 cup) good-quality whole-egg mayonnaise
  • 21.00 gm fresh lemon juice
  • 12 slices wholemeal bread, toasted
  • 1 ripe avocado, halved, stone removed, peeled, thinly sliced
  • 8 small butter lettuce leaves
  • 1 vine-ripened tomato, thinly sliced
  • Hot chips, to serve
Instructions:
  • Season chicken generously with sumac, salt, and pepper. Heat oil in a non-stick frying pan over medium heat, then cook chicken for about 4 minutes per side until beautifully golden and fully cooked. Transfer to a plate, cover with foil, and keep warm.
  • Fry half of the pancetta in the pan for 1 minute per side until crispy. Place on a paper towel-lined plate. Repeat with the rest of the pancetta.
  • In a small bowl, mix the creamy mayonnaise, zesty lemon juice, and pungent garlic. Taste and add a touch of salt and pepper for perfect seasoning.
  • Slice chicken thinly against the grain. Spread a generous amount of the creamy mayo blend on half the bread slices. Layer on crispy pancetta and creamy avocado. Place the remaining slices of bread on top, then add fresh lettuce, ripe tomato, and the sliced chicken. Finish with the rest of the mayo mixture and bread. Cut in half and enjoy with hot chips, if desired.
