Ingredients:
  • 115g (1/2 cup) caster sugar
  • 125ml (1/2 cup) water
  • 1 vanilla bean, halved lengthways
  • 1 mango
  • 1 red papaya, peeled, halved, cut into 2cm wedges and halved crossways
  • 4 passionfruit, halved
Instructions:
  • In a small saucepan, combine sugar, water, and a vanilla bean. Heat over medium-high heat, stirring constantly until the sugar dissolves, about 2 minutes. Reduce heat to medium and simmer uncovered for 3 minutes without stirring.
  • Cut the cheeks from the mango near the seed and remove the skin. Slice the flesh into 1cm-thick pieces. Combine the mango and papaya in a heatproof bowl, then scoop out the passionfruit pulp and mix it in.
  • Drizzle warm syrup over fruit and discard vanilla bean. Let it rest for 15 minutes to cool and enhance the flavors. Serve while it's pleasantly warm.
