Papaya & lime salsa with ice-cream

Ingredients:
  • 500g ripe papaya, de-seeded, diced
  • 2 passionfruit, pulped
  • 10.00 gm caster sugar
  • 1 lime, juiced
  • Vanilla ice-cream, to serve
Instructions:
  • Mix the diced papaya with the passionfruit pulp in a bowl.
  • Blend the sugar with the vibrant lime juice until dissolved, drizzle over the colorful fruit, then gently mix together. Present the fruit on top of indulgent scoops of creamy vanilla ice cream.
