Elevate your salmon with a fresh tropical salsa, perfect with rice.
Ingredients:
  • 9.60 gm sea salt
  • 20.00 ml cracked black peppercorns
  • 18.40 gm rice bran oil
  • 4 x 100g salmon fillets, skin on
  • Steamed jasmine rice, to serve
  • Lime wedges, to serve
  • Fresh coriander leaves, to serve
  • 400g papaya
  • 1 Lebanese cucumber, halved, seeded, thinly sliced
  • 2 makrut lime leaves, shredded
  • 1/2 long green chilli, seeded, finely chopped
  • 42.00 gm lime juice
  • 24.40 gm fish sauce
  • 40.00 ml fresh coriander leaves, finely chopped
Instructions:
  • Prepare a flavorful Papaya Salsa by mixing together ripe papaya, crunchy cucumber, fragrant lime leaves, spicy chili, tangy lime juice, umami-rich fish sauce, and fresh coriander in a small bowl. Let the flavors meld together as you set it aside.
  • Mix salt and pepper in a small bowl. Rub the mixture onto both sides of the salmon, pressing gently to adhere.
  • Begin by gently warming oil in a generous frying pan set over medium heat. Add salmon with skin facing down and cook for 3 to 4 minutes. Next, flip the salmon and continue cooking for an additional 2 to 3 minutes until it reaches your desired level of doneness. Serve alongside flavorful papaya salsa, rice, lime wedges, and fresh coriander. Enjoy!
