Crispy pappadums are a satisfying mid-morning treat.
Ingredients:
  • 12 mini pappadums
  • 200g natural yoghurt
  • 1 Lebanese cucumber
  • 20.00 ml chopped fresh mint
  • 8 cherry tomatoes
  • lettuce leaves
  • olive oil spray
Instructions:
  • Coat 12 mini pappadums with olive oil spray and arrange 2 on a plate over non-stick baking paper. Microwave on High for 1-2 minutes until crispy. Repeat with the remaining pappadums. In a bowl, mix 200g natural yoghurt, 1 finely chopped Lebanese cucumber, and 1 tablespoon fresh mint. Quarter 8 cherry tomatoes. Line pappadums with lettuce leaves and add the yoghurt mixture and tomatoes on top before serving.
